Filled, folded, straight onto the griddle
The dough is filled and folded on the counter, then laid on the big round iron griddle at the front of the stall. You stand there while it cooks and it comes off blistered, hot and cut into wedges — into a box to take away, or to eat right by the stall.
Everything is halal, and the board marks which fillings are vegan. Next to the griddle sit the wooden bowls that go with it: pomegranate and bulgur salad, sumac red onion, hummus. Spinach and feta, chicken, lamb, mushroom, three cheese — the board tells you the lot.
